Reason why sugar is able to provide a sweet taste in coffee
It is undeniable that coffee has a genuine taste bitter. That is why for those who like to drink coffee but do not like the bitterness, tend to add sugar into their coffee cups.
So, why coffee may taste sweet after no added sugar in it? Of course the answer is that the sweet taste of sugar itself.
But a study reported by dailymail.co.uk managed to find a scientific answer.
"When added water, the molecules of caffeine in coffee tend to stick to one another so that it feels to be not too bitter. But when sugar is added, caffeine molecule is getting stuck. While sugar and water molecules are also fixed together that would defeat the caffeine molecule so that then appears sweetness, "explained Dr. Seishi Shimizu from the University of York.
In order to know this chemical reaction, Dr. Shimizu using the science called statistical thermodynamics. This science is a branch of chemistry that connects the microscopic with everyday human life, including the food and flavor of each food consumed by humans.
